Why fifty millimetres
Fifty millimetres per side gathers about as much light as a 50mm telescope and gives a five millimetre exit pupil at ten times magnification, which is close to what a dark adapted adult eye can use. Below 40mm the view dims noticeably; above 50mm the weight starts to decide how long you hold them up.
What stargazing binoculars actually show
The moon in detail, the four bright moons of Jupiter, dozens of open clusters, the Andromeda galaxy as a clear oval, the Milky Way resolving into star fields through Cygnus and Sagittarius, and comets, which are usually better in binoculars than in a telescope because they are large and faint.
The tripod question
Above about 10x, or above about 50mm, an adaptor and a tripod stop being optional. Mounted binoculars show noticeably more than handheld ones of the same size, because the shake that costs you detail is your own pulse. A cheap L-adaptor and any photographic tripod is enough.
